Pink Dragon Bowl

Pitaya, or dragon fruit, has hot-pink (or white) skin and a polka dot flesh inside. The skin also looks like green flames. It’s really cool! And even more, it’s naturally photogenic (*wink*).  Pitaya has a subtly sweet and is  similar to kiwi (in  taste and texture). I’ve red that pitaya is a cactus species but don’t be alarmed! The leaves don’t prick. 

For this recipe, I actually used a frozen pitaya packet, sold in a pack of 4. I’ve only ever seen pink frozen pitaya packets. Something about that hot-pink color that is just eye catching! This would be a great option to make in the morning but I don’t recommend it on the go. If you don’t allow yourself to enjoy breakfast at home, just save it for the weekend! This is good and takes less than 5 minutes!

Bowl Ingredients

  • 1 packet frozen pitaya
  • 1 frozen banana
  • 2/3 cup frozen mango

Topping Ingredients

  • Blueberry
  • Raw Almond Butter
  • Kiwi

Instructions

  1. Add all bowl ingredients to a food processor and blend until smooth.
  2. Add desired toppings.
